An enzyme found in adipose tissue (fat cells) called lipoprotein lipase (LPL) helps the body to store fat, for the lean times. Transporting fat from the blood to the fat cells depends on this enzyme. In people who have restricted their diet to lose weight, the activity of LPL is much increased!!!!!!

The very action of dieting greatly increases the activity of this potent, fat-storing enzyme, a lot of people have found once they start eating again they regain weight, sometimes a little extra just for good measure.

LPL and Insulin

Insulin stimulates the quantity and activity of LPL, which seems to be the prime method by which the body fattens itself (laying down reserves). This is another very important aspect to the whole health/weight program.

Insulin is also adept at slowing down the metabolic rate.

Dieting can induce changes in the action of an enzyme known as sodium-potassium ATP-ase. This is a fat burning enzyme, which is significantly lower in dieters.

So dieting may well be increasing your fat-storing enzymes while lowering your fat-burning enzymes. Not an ideal situation for losing weight.
